Glenloth pigeon pot-roasted with cotechino, vin santo, grapes, sage, baby fennel, Jerusalem artichoke puree

Rosemary roasted duck breast with confit leg in porchetta, beetroot

Suckling lamb "abbacchio" wet roasted with white wine olive oil, rosemary, garlic and crumbs, with peperonata

250 day grain fed beef rib (1kg) roast for "two to share", mustard "sugo" bone marrow and parsley soufflé, potato, witlof, pear and Gorgonzola salad

Venison shoulder braised "in salmi" chocolate and spices, grilled cutlet, Brussels sprouts, castagnaccio, sweet corn pâté
